COQ AU VIN
Non-stick cooking spray
3–lb. boneless skinless chicken breast, cut into 1 ½” cubes
1 envelope (1/2 of a 2.2-oz. pkg.) beefy onion soup mix
1 ½ cp. loose-pack frozen small whole onions
2 cp., sliced button mushroom
½ cp. dry red wine
Lightly coat an unheated large skillet with some non-stick cooking spray. Heat skillet over medium heat. Cook cubed chicken breasts until golden brown. Place in a 4-quart slow cooker. Sprinkle the chicken with the dry soup mix. Add onions and mushrooms. Pour dry red wine over all. Cover and cook on low heat setting for 6 hours. Serve with garlic mashed potatoes.
