4 eggs
1/4 tsp. salt
2 cps. flour
21/4 cp. mil
1/4 cp. melted butter
2 tbsp. sugar
1/2 tsp. vanilla
filling:
2 lbs. small curd cottage cheese
2 lb. bakers or ricotta cheese
6 eggs
1/2 cup sugar
1/2 tsp. vanilla
Mix batter. fry batter on both sides in medium frying pan for approximately 1 to 2 minutes on high heat. stack on top of each other on a plate. Should make 32 to 36.
Prepare filling.
Spread filling on cooked crepes. Roll crepe with filling into a roll. Line rolled crepes on a greased cookie sheet.
Bake at 350degrees for 25 minutes.
Serve plain, warm or cold. Or top with fruit and whip cream.
