PINEAPPLE -YAM KABOBS
With the weather being nice this weekend here is something that will make an excellent side dish for almost any type of pork or poultry. If using wooden skewers soak in water for 30 minutes before using to prevent burning.
PINEAPPLE-YAM KABOBS
4 sweet potatoes
pineapple cubes
4 apples quartered
1/2 cp. melted butter
2 tsp. cinnamon 1/4 tsp. ground clves
1/4 tsp. nutmeg
2 tbsp. lemon juice
Scrub and cook sweet potatoes in salted water 25 minutes or until just tender. Peel and cut into large pieces. Thread on skewers, alternating potatoes, pineapple and apple quarters. Brush with mixture of remaining ingredients. Grill over hot coals, turning and basting frequently, until lightly browned.
