APPLE POTATO PANCAKES
Well it is Thursday again. Time for another recipe form the book THE VAGABOND CHEF. This time it is a breakfast entree, a lunch or a side dish for dinner. Thet are delicious with cinnamon and sugar, applesauce or even syrup.
APPLE POTATO PANCAKES
6 potatoes, peeled and shredded
3 apples, peeled and shredded
1 cup flour
2 eggs
1/2 tsp. salt
oil for frying
Place oil in a skillet heating over high heat. While the oil is heating up, mix the potatoes,apples, flour, egg s and salt. Place mixture by 1/2 cups into the oil. Fry until golden brown. Flip over and continue to fry pancakes until done.
A variation would be adding 1/2 cup chopped pecans or 1/2 cup plumped raisins to the mix.
